Maria Cristina Nicoli is full professor of Food Science and Technology. Before her current position, she was a researcher at the University of Udine and then associate professor at the University of Sassari. At the University of Udine, she held the role of delegate of the rector for patents and then of pro-rector for research. M.C. Nicoli deals with issues of food quality and safety. Specifically, her main research interests concern the development of models for predicting the shelf life of foods and new technologies for the restoration and stabilization of foods and for the implementation of their nutritional functionality. In the context of these researches, in 2006 the project she presented together with her research group was the winner of Start Cup Business Plan Competition FVG and of the National Award for Innovation. M C. Nicoli is author of more than 130 publications and scientific texts with international circulation.
Quality and food safety issues of IV range vegetables and new perspectives
The speech illustrates the safety issues of IV gamma vegetables obtained with traditional production methods and through hydroponic and soilless cultures. It will also present some post-harvest technological solutions to extend the shelf life of the IV range product.
